At last all our Christmas decorations and fiber-optic Christmas tree is put away and I’m ready to settle down into a before-Christmas routine.  It is time to put all the candies, snacks and unwholesome holiday foods aside and resume eating healthy meals.  I’m ready for the change.  It has not been a good time for this diabetic (me) to eat right.  Temptations have been too great!!!

This recipe is Karen Titus Rose’s recipe and was given to by her mother and my friend, ImogeneElliott.  Okra is one of my favorite vegetables.  I like it fried, in gumbo, a couple of pods cooked in beans and as Okra Goulash.  This goulash is a bit different because of the addition of the ground beef and instead of a side dish is a main entrée.  If cooking it for Mac and me, I would halve or fourth the ingredients.

1 lb. bacon
2 lbs. ground beef (I always use lean)
Salt (I would omit because of our heart healthy diet)
Garlic powder
1 large onion, chopped
1 bag sliced okra
2 cans whole kernel corn (do not drain)
Tomato sauce, pureed tomato, tomato soup, tomato juice or V-8 juice
2 large cans chopped tomatoes (do not drain)
Cooked rice

Slice bacon into small pieces, brown in a skillet; drain.  Add beef and seasonings to taste.  Stir in onion, okra and corn; sauté until okra is no longer slick.  Pour and stir in tomato sauce, pureed tomato, tomato soup OR V-8 juice.  Cover and let simmer until okra is almost done.  Add canned tomatoes and continue to cook until okra is done.  Serve over the rice.

MAC’S UPDATE: Mac was feeling weak and dizzy.  His BP was so low; we made arrangement for him to see the cardiologist.  The doctor adjusted his medication and hopefully this will help Mac feel better.
