COCA-COLA PORK CHOPS

In 2004, Mac and I spent the Thanksgiving holiday with my daughter and her husband, Carol & Herb Farley.

They live in Haughton , Louisiana which is located near Shreveport and Bossier City , Louisiana .

During that weekend, Carol and I attended a craft show.

One of the booths was selling books and you know me….I just had to purchase a cookbook.

It is titled “Busy Woman’s Cookbook” by Sharon and Gene McFall.

It contains 221 pages of recipes requiring only 3 or 4 ingredients and as the title implies, is perfect for the busy woman.

It would also be helpful to the novice cook.

The book also has short stories and facts about famous and influential women which adds even more interesting reading.

Recently for Mac and my dinner, I prepared this recipe for Coca-Cola Pork Chops on page 88 of the book. I only had two large pork chops and after removing the fat, I divided them into four pieces, still preparing the sauce as directed. I did use seasoned meat tenderizer on the chops. Other than those few changes, instructions were followed as written.

My side dishes were Pinto beans (used fresh frozen from grocery store freezer), fresh squash & leeks steamed in butter, potato salad leftover from the day before and cheese stuffed bread sticks (purchased from Schwan’s).

I purchased the leeks from Bridge City ’s Market Basket instead of green onions.

I had always wanted to try cooking with leeks and was pleased with the flavor.

The taste is similar to green onions but sweeter.

For the quantity, it was less expensive than buying green onions.

What I didn’t use for the meal, I chopped up and froze for future use.

If you have never tried leeks, I highly recommend using them.

I don’t often see them in the grocery stores….or where I shop anyway.

I called Mr. Gene McFall for permission to use this recipe in the Record and he was very nice. He not only wrote this book in conjunction with his wife Sharon (owner of her own restaurant) but has also performed his prize-winning role of Will Rogers titled “Will Rogers’ USA ” since 1982. Gene wrote his own one-man show, “Witty World of Will; Rogers” in 1989. I enjoyed speaking with him and appreciate him allowing me to share this recipe with you. It’s another KEEPER.

2 Tbsp. oil (I used Extra Virgin Olive Oil)

6 pork chops (I used 2 large, divided into 4 pieces)

1 cup ketchup

1 cup Coca Cola

In skillet, add oil and brown pork chops on both sides. Add ketchup and Coca Cola. Cook on low heat for 35 minutes. (I covered chops while they cooked). Makes 6 servings.
