Hope you had a happy Thanksgiving day. Sorry I didn’t get this recipe in before Thanksgiving. It really makes a pretty salad. I always put it in a clear glass bowl, so you could see just how pretty it really is. You can save this and make it for Christmas or New Year’s Day. It is not only pretty, it is good for you.

I have always called it an English pea salad and almost didn’t find it because I had the wrong name for it. It doesn’t help that my sight is getting worse. I have it now so don’t forget to save it.

• 1 head of shredded lettuce
• 1 (10 ounce) package frozen green peas
• 1/2 cup chopped celery
• 1 small can, drained, chestnuts
• 1/2 cup chopped onion
• 1 pint mayonnaise
• 1 cup grated cheese

Layer ingredients as listed, refrigerate overnight.
I have seen it with a layer of sliced boiled eggs. It did look good but, didn’t do much for me on taste.

Strawberry Surprise Salad
This Strawberry Surprise Salad is also very good.

• 2 packages 3 ounce strawberry gelatin
• 1 cup boiling water
• 1 (10 ounce) package frozen sliced strawberries
• 1 (16 ounce) can crushed pineapple
• 3 medium sliced bananas
• 1 cup chopped walnuts
• 1 pint sour cream

Dissolve gelatin in boiling water. Fold in strawberries. Mix pineapple, bananas and nuts; then add to gelatin. Pour half of the mixture into a 12×8 inch dish. Chill until firm. Spread with sour cream. Gently pour remaining mixture over sour cream. Refrigerate. Serve when set.
