Before I get into the pie, I have had two calls about the shrimp or crawfish etouffee. (When do you add the flour?) Add flour before putting shrimp back into seasoning.
I got this pie recipe from Jenean Franks about 40 years ago, long before I ever even thought of writing my column about cooking.
• 1 cup water
• 3 tablespoons cornstarch
• 1 cup sugar
• 3 tablespoons dry strawberry Jello® mix
• 2 cups strawberries
• 1 pie crust (pre-bake)
Wash strawberries and place in baked pie shell. The last one I made, I used frozen strawberries. Mix sugar, Jello® and cornstarch together, add water and cook on low until mixture begins to thicken. Remove from heat and allow to cool slightly. Pour into pie crust, over strawberries. When cooled; top with whipped cream.
When I was at the hair dressers last week, I learned a couple of things you might like.
1. When making a chocolate pie using instant pudding, add about three tablespoons of chocolate syrup. 2. When making a lemon pie using instant jello pudding, use a small can of sweetened condensed milk with the regular sweet milk and two tablespoons cool whip.
