This recipe is for our dear friend Sue’s sister Billie Hock all the way up in Jasper. Sue thinks her sister must be in her second childhood to want a child’s preference for lunch. I think it is a great thing for any age, especially if you are in a hurry and are looking for something simple and quick.

• 2 cups pancake mix
• 1/2 cup cornmeal
• 1 teaspoon salt
• 1 1/2 cups milk
• 10 frankfurters
One thing about wieners, now you can have beef, chicken or turkey, what ever suits your fancy.
Combine pancake mix, cornmeal and salt; mix well; add milk and mix well. Insert a popsicle stick in each frankfurter and dip in batter; coat well. Fry the corn dog in fat, heated to 365 until golden brown. Turn corn dog to brown evenly. Serve immediately.
Note: Batter will thicken while standing. If yours does, just add a little more milk, a little at a time.
