Chicken and rice

Last updated 10/11/2011 at Noon

I sent a plea for some short recipes a few weeks ago and an old time neighbor sent me several. Margaret Louviere lived in our neighborhood back in the 70s. It was good to hear from her.

I hid the recipes in one of my recipe books and promptly forgot which one. It is not hard to do when you have had a slight stroke, I am told. I don’t think age has anything to do with it, do you?

I am really glad the stroke was small. The Lord was good to me in that respect.

• 1 cup uncooked rice

• 1 cut up fryer

• 1 can cream of mushroom soup

• 1 bag dry onion soup mix

• 1 1/2 can water.

Place washed rice in casserole dish, then add chicken. Pour soup and water in. Bake one hour and 20 minutes at 325 degrees.

Now all you need is one vegetable and a big chunk of bread.

Gooder’n Syrup, Von
