Diet Chili Con Carne

Diet Chili Con Carne It is cold and wet outside, just right for chili or gumbo.

I have Marie Howells recipe for diet chili that I am passing on to you.

Marie and I have been neighbors for some 40 years, and this is more than I have gotten from other friends of mine.

I really do need something different to pass on to the readers.

• 1 lb. extra lean ground beef • 1 cup chopped onions • 4 cups green peppers chopped • 1 tsp.

sale • 1/8 tsp.

black pepper • 20 oz whole ripe tomatoes (I use chopped.) • 2 tsp.

chili powder • 15 ox can red kidney beans drained and mashed In a 4-qt saucepan cook beef, 3/4-cup onions and 1-cup green pepper 5 to 8 minutes over medium heat, stirring occasionally until meat has lost its pink color.

Spoon off and discard any liquid.

Stir in tomatoes and chili powder.

Add salt and pepper.

Cover and simmer 30 to 60 minutes longer stirring occasionally.

Stir in beans and cook another 5 minutes.

Garnish wit remaining onions and bell pepper.

Makes 6 diet servings containing 259 calories per 1/2 cup, but do not know about kidney beans because I don’t buy them.

I do like pintos though.

Well, any way, diet chili is Gooder’n Syrup.
