Pecan Delight Pie

Here is another way to get rid of last year’s pecans.

I was lucky to get this.

I was looking for Wyatt Cafeteria’s Eggplant dressing and Wynona McAfee Johnson called that she had two of Wyatt’s recipe cards.

One with the dressing and the other was one of their most famous desserts, Pecan Delight Pie.

Pecan Delight Pie 4 egg whites (at room temperature) 2 c.

sugar 1 3/4 tsp baking powder 1/4 tsp.

vanilla 3/4 cup chopped pecans 1 1/2 - 2 cups whipped cream 1/4 cup chopped pecans 2 cups saltine crackers, coarsely broken 1 1/2 - 2 cups whipped cream Whip egg whites on medium until soft peaks form.

Gradually add baking powder and sugar.

Whip until stiff peaks form and all sugar is dissolved.

Add vanilla and mix thoroughly.

Fold in crackers and 3/4 cups of pecans.

Pour into greased 9 inch pie pan.

Bake at 325o for one hour.

Cool upside down.

When Thoroughly cool top with whipped cream and 1/4 c.

pecans.
