Casa Ole Dip
I thought that you might need something to eat all of those leftover Easter eggs with. That is if people still make their own Easter eggs.
When our boys were growing up we would boil our own eggs allow them to cool some what them take our old Crayolas and draw or write on the egg or just color it. Now days, it seems as if the thing is to get plastic eggs and fill them with candy. That seems like a good thing, however, you miss out on all those things that you can do with leftover boiled eggs.
Anyway, I found some snack things that you can eat with the leftover eggs that you might not have. So have a happy Easter, no matter what kind of eggs you might have.
Casa Ole’ Dip
1 pound Monterrey Jack with jalapenos
1 pound Velveeta
1 can chopped green chilies
milk (Add till desired thickness is reached.)
On medium heat, melt cheese in a large saucepan. Add chilies to pot, stirring constantly. Add milk to desired thickness is reached.
I also have Dee Anderson’s Cheese Straws.
2 cups sharp cheddar cheese, grated
2 cups flour
1 cup melted butter
4 beaten eggs
Mix cheese, flour and butter, stirring thoroughly. Add eggs. Roll out like a pie crust. Cut into 1/2 x 3 in. strips. Twist each strip gently. Bake at 375 degrees until golden brown. Makes eight dozen.
