Thanks to my daughter-in-law Marcia, we have been having some fresh from the garden vegetables.
Today we had yellow squash.

• 1 slice of bacon cut into small pieces
• 1/2 chopped onion
• dash of salt
• 1 tablespoon margarine or butter

Simmer until onion is clear, add a dash of salt, simmer, adding a little water if needed.
We also had fried eggplant. Slice thinly, season with salt and pepper, roll in cornmeal, fry in small amount of oil.
Cooking vegetables is simple and they are oh so good.


• 6 zucchini
• 3 cups soft bread crumbs
• 1/2 cup graded Parmesan cheese plus extra to sprinkle on top
• 1 small onion minced
• 3 Tablespoons minced parsley
• 1 teaspoon salt
• 1/8 teaspoon pepper
• 2 beaten eggs
• 2 teaspoons margarine or butter.

Cut ends off zucchini and boil in salted water for five minutes. Halve and scoop out pulp. Combine pulp, bread crumbs, 1/2 cup cheese, onion, parsley, salt, pepper and eggs; mix well. Fill the shells and dot the top with butter, sprinkle with cheese, Bake on 350 degrees for 30 minutes.
