Swiss Steak

Our friend Floyde asked me last week how would you cook steak and fresh vegetables together. I always use my five quart pot, even though I have two crock pots.

Brown the meat first, add onions and potatoes and all of the other vegetables you are going to add. Turn fire ever so low and cook four to eight hours. That’s just me. I do have a Swiss steak recipe that you would probably cook in your crock pot.

• 1 1/2 pound round steak 3/4 inch thick

• 2 tablespoons flour

• 1/2 teaspoon salt

• 1/4 teaspoon pepper

• 1 medium onion, sliced

• 1 carrot chipped

• 1 small stalk celery chopped

• 1 15 ounce can tomato sauce (can of stewed tomatoes can be substituted)

Cut round steak into serving pieces. Season flour with salt and pepper. Dredge meat through seasoned flour. Put onions in bottom of crock pot, add meat, carrots and celery and cover with tomato sauce. Cover pot and cook 8 to 10 hours. If you cook it on high you can cut the time in half.

However the idea behind using a crock pot is that you can put it on the a.m. and it will be done in time for dinner or my supper.

Serves 6. All you need is a salad and a light dessert.
