Corn Casserole

Charles and I have noticed that a tremendous amount of corn (deer feed) is really falling off the shelves at Wal-Mart, and other stores I am sure. However, we asked Candy just how much is being sold and I think she said about 30,000 pounds so far.

Not long after I asked about the corn, I stepped in something someone had dropped on the floor and fell on my left leg, breaking just above the ankle. Many thanks go to Tammy, the employee, for staying on the floor with me until the ambulance got there.

I guess we won't to be watching the corn go by for at least six weeks according to the doctor. He says I will have to be off my leg that long.

Now, after 54 years, Charles is going to have to learn how to run the washing machine and cook, he can already run the dishwasher.

Corn is also one of my favorite dishes. I have one of the unusual corn casseroles for you.

Two cans of corn, one whole kernel and one cream style.

8 oz of sour cream.

2 beaten eggs

6 oz pack of cornbread mix

1 chopped onion

1 chopped bell pepper

1 1/2 cups of grated cheddar cheese

1 stick of butter

Saute onion and bell pepper in butter.

Combine cornbread mix and corn, add well beaten eggs, onions, bell peppers, cheese and sour cream. Bake in a greased 13x9 inch pan on 350 degrees for 40 minutes.
