Stuffed Tomatoes with Shrimp

I have been wanting fried shrimp for ages and just haven’t fried any. However, I found this scrumptious looking recipe and here goes. I have not prepared this, but it just looks Gooder’n Syrup.

1 pound of shrimp

4 large tomatoes

1/2 cup of chopped onions

1/4 cup of chopped shallots

1/2 cup of chopped green peppers

1 clove of garlic, chopped fine

1/2 teaspoon of Lawrey’s seasoning

1/2 teaspoon of salt

1/4 teaspoon of pepper

1 teaspoon of sugar

1/2 brick of margarine

1/2 cup of bread crumbs

Boil shrimp until done about 10 minutes. Peel, de-vein and chop fine. Wash tomatoes and slice off tops and scoop out meat, leaving shell of filling later. Chop tomato meat into small pieces. Melt margarine in sauce pan and add all seasonings except bread crumbs. Saute until tender, not brown. Add raw tomato to seasonings. Add sugar, salt and pepper and continue cooking for about 20 minutes, or until liquid cooks down. Add shrimp and continue cooking for about four minutes. Take from heat, add bread crumbs to thicken. Put into tomato shells, sprinkle remaining bread crumbs and bake in moderate oven, about 350 degrees, for 20 to 30 minutes, or until shells appear tender.

Now, don’t that sound scrumptious and Gooder’n Syrup. Von.
