Fig Upside Down Cake

Have you ever made fig preserves and had a bushel of liquid left over? I never know what to do about that however, about two weeks ago I had an upside down fig cake made for my birthday and it was unique and delicious.

• brown sugar

• fig juice

• a box of cake mix

• 1/2 stick of butter

Cover a loaf pan with brown sugar, cover that with the liquid left for from cooking the fig preserves. Mix cake occording to the directions on the box. Pour over the brown sugar and figs.

I would use a yellow cake mix, However this wasn’t.

Bake according to the directions on the cake mix box. After the cake is done. Add butter to the top. Flip the cake over, so the brown sugar is on top.

I have always made fig cakes, however I always used my 9 inch round pan that is three inches deep, and using my recipe.

• 1 cup flour

• 1 cup milk

• 1 cup sugar

• 1 egg

• 1 teaspoon baking powder

Placing the mixture into the pan. I would add my cooked figs on top of the mixture and bake. However this is entirely different and much better.

It is Gooder’n Syrup. Von
