I had an apricot Jello-O left from making apricot jelly from jigs last year so I set out looking for a simple recipe for apricot Jell-O. I found I had Margie Calloway’s Jell-O salad.
I didn’t have any marshmallows, but made it anyway and it is Gooder’n Syrup, even without marshmallows.
• 2 packages Apricot Jell-O • 2 cups boiling water • 1 1/2 cups cool water • 1 #2 can crushed pineapple • 2 sliced bananas • 1 cup miniature marshmallows Dissolve Jell-O in boiling water, add cool water and set aside to slightly thicken.
Add bananas, marshmallows and drained pineapple ( Save the juice to topping.) Let set in refrigerator until firm.
Topping • 1/2 cup sugar • 1/2 Tablespoon Flour • 3 ounces cream cheese • 1 egg beaten • 1/2 cup pineapple juice • 10 ounce cool whip Mix sugar, flour and egg.
Add pineapple juice, cook until thickened.
Add softened cream cheese.
Cool, then fold in Cool Whip.
Spread over Jell-O. It truly is Gooder’n Syrup.
