If you are like most people and me, you like quick and easy one dish meals. During these hot days of summer, I want to escape from the kitchen as quick as possible. This kind of meal helps makes that possible.
My friend Pat and her husband, Rodney, live a health conscious life style. She and Rodney walk daily plus spend a lot of time outside, maintaining their yard and vegetable garden. Pat also tries to provide a nourishing diet for their meals. She brought this healthy casserole to this month’s Adult Golden Harvest Club meeting. Not only did she bring the casserole but also gave me the recipe to share with the Record. She told me it was handed down from her cousin, Franicine, to Pat’s mother to Pat. She doesn’t know why the title, “Talahash.” Perhaps the name is because the original recipe is from Tallahassee? I just know it is delicious and a KEEPER for your recipe files.

1 lb. lean ground beef 1 medium onion, chopped 1 green pepper, chopped 1 clove garlic, minced 1 (14 oz.) can whole kernel corn 18 oz. tomato juice 2 oz. sliced stuffed green olives 5 oz. egg noodles, uncooked American sliced cheese or grated cheese
Sauté ground beef, onion, bell pepper, and garlic. Add corn, tomato juice, olives and noodles. Simmer, stirring occasionally for 25 minutes or until noodles or done. Remove from heat and top with sliced (or grated) cheese. Cover and let stand until cheese melts.
