Barbeque Pork Ribs

On the week of March 5th of this year, you may recall the recipe for Coca-Cola Pork Chops that I featured in my recipe column.  That recipe came from Sharon and Gene McFall’s recipe book titled “Busy Woman’s Cookbook”.

In appreciation for his permission to use the recipe from their cookbook, I sent him the clipping from the paper. He kindly responded by writing me a nice letter and sent me his and his wife’s (Sharon) their newest cookbook titled “Busy Woman’s Slow Cooker Cookbook...Meals Ready and Waiting.” Like the previous book, not only does it have recipes but each page has brief facts about famous women.

As I have told you before, if I had to make a choice between my microwave or crock pot, I would choose the crock pot every time. I really, really like using my crock pot for cooking. It has freed valuable hours numerous times to accomplish other tasks while my meal for the day is gradually being cooked. It is a special pleasure to walk into the house and smell those fragrant aromas; realizing dinner will soon be on the table..

Also by now you should know my two favorite foods in the whole universe are Barbequed Pork Ribs and Coconut Pie. Those two dishes (for me) are an example of the perfect meal.

In the McFall’s newest cookbook, there are 244 pages of appealing and inviting crock pot recipes. There are several recipes for barbequed pork ribs and this is the one I decided to try first. Using baby back ribs, I followed the recipe on page 192. The side dishes I included were Roasted Potatoes, Fresh Green Beans, Fruit Salad with a Special Fruit Dressing and Cheese Bread Sticks. These ribs were sensational. I hope to eventually try more of his Barbeque Pork Ribs recipes but it will be difficult to top this one a true KEEPER.

• 3 to 3 1/2 lbs. pork ribs (I used Baby Back from Market Basket Grocery Store cut into 3 sections) • 1/2 tsp.

salt • 1/2 tsp.

pepper • 1 large onion, sliced • 2 (16 oz.) jars barbeque sauce • 1/3 cup maple syrup • 2 Tbsp.

packed brown sugar Sprinkle ribs with salt and pepper (I also sprinkled with meat tenderizer).

Place ribs on cookie sheet.

Place under broiler 15 minutes to brown.

Drain.

Cut ribs into serving pieces.

Place onions in slow cooker.

In medium bowl, combine barbeque sauce, syrup and sugar.

Mix well.

Arrange ribs over onions.

Pour mixture over ribs.

Cover.

Cook on low 8 to l0 hours (I did not have to cook mine that long.

Each crock pot is different.

You should be familiar enough with your crock pot to adjust the length of time it will take to cook the ribs).

Makes 6 servings.
