‘Taters ‘n Eggs

According to the morning news, winter is on the way.

Way up north, the morning temperature is in the 40s.

One thing is for sure, even if our winter isn’t upon us.

School days are.

The kids are going to need a good breakfast to start their day with.

I just happen to have Lori Glover’s ‘taters ‘n egg recipe.

That is a good breakfast for anyone.

Kids might not want the onions, but the old man will.

Ingredients: 2 or 3 slices of bacon 2 or 3 medium potatoes 1/3 cup chopped onion 3 eggs 2 tablespoons milk Salt, pepper or seasoned salt to taste 1/2 cup shredded cheese Directions: Fry bacon over medium high heat until crisp.

Drain on paper towels.

While bacon is frying, peel, wash and dice potatoes.

When bacon has been taken up, pour off part of the grease but leave enough to cover bottom of skillet.

Put diced potatoes in skillet and fry over medium high heat until brown.

Stir constantly.

While potatoes are cooking, stir in onions.

Break eggs in a small bowl.

Add milk and beat slightly with a fork.

When potatoes and onions are tender.

Stir egg mixture in with them.

Season to your taste.

Crumble bacon and add to potatoes and eggs.

If you are using cheese, stir it in just before serving, giving it just enough time to melt.
