Evy's Cajun Kitchen

While I have never tasted these (I don't care for jalapenos), everybody who has eaten them tell me they are delicious. I like to make these for football game snacks, church gatherings or parties. They go great with Mexican dishes and a good cold beer, or just as a snack. The last time I took them to a gathering was for a Superbowl party. I tripled the recipe and they were gone in no time. So if you try these, you will have to let me know how they are.

Jalapeno Popper Wontons

1 package wonton wrappers

1 8 oz. package cream cheese, softened

3 jalapenos, seeds and ribs removed and finely chopped

1/2 cup shredded cheddar cheese

Vegetable oil for frying

Combine cream cheese, jalapenos and cheddar cheese. Arrange wontons on cookie sheet.

Add 1 teaspoon filling to each wonton without over-filling. Dip fingers into water and run along edges of wonton; fold wontons over to seal, and make a triangle.

Fry wontons until brown and crispy. Drain and sprinkle with coarse salt.

Enjoy, and Bon Appetit
