“There’s a 100-day period near the holidays where we are running one million pounds per day of sweet potatoes through our factory,” says Annie Ham, Marketing Director of McCall Farms, the parent company of Bruce’s Yams. “We harvest sweet potatoes from 30 trusted farmers in North Carolina and Louisiana, so you can be assured these are quality crops grown in the U.S. The pallets are all shipped directly from facilities in both Lousiana and North Carolina. But more than half of the product is shipped from our plant in Effingham, South Carolina. This is a town of less than eight thousand people and one stoplight, so it’s an exciting time of year here.”

Americans consume nearly five pounds of sweet potatoes per person per year. And the holidays aren’t the only time to eat sweet potatoes.

“Sweet potatoes are very healthy for you any time of year, “ says Ham. “They rank low on the Glycemic Index and therefore cause a gradual rise in blood sugar. This makes you feel full longer and is great for those counting carbs and for diabetics.”

Sweet potatoes provide twice the recommended daily allowance of vitamin A, and they are a good source of Vitamin B6, Iron, Potassium, Fiber and Vitamin C.

The ways you can prepare a sweet potato are nearly endless… baked, mashed, oven roasted, grilled, pureed, friend, in a pie, as a soup and of course, in a casserole.

Sweet Potato Biscuits

Ingredients:

1 large (13 oz.) can of Bruce’s sweet potatoes, drained and mashed

5 C all-purpose flour

2 Tbsp. baking powder

2 tsp. salt

2 tsp. cinnamon

1/2 tsp. nutmeg

2/3 C butter

1 1/2 C milk

Instructions:

In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.

Cut in the cold butter until it resembles coarse crumbs.

In another bowl, combine the mashed sweet potatoes and milk.

Add to the crumb mixture just until combined.

Turn onto a floured surface; knead 8-10 times.

Roll to ½-inch thickness and cut with 2-inch biscuit cutter.

Place on un-greased baking sheet.

Bake at 425 degrees for 18-20 minutes or until golden brown.

Remove to wire racks and serve warm.

Prep time: 20 minutes

Cook time: 18-20 minutes

Yield: 24
