When families gather during the holidays, the thing on most people's minds is food. We think of the turkey, ham, sweet potato pie and cranberry sauce. But who ever thinks of breakfast?

Breakfast is essential to getting the day started right. In our house, we gather first in the kitchen and decide what we are going to eat as the first meal of the day. If there's company, it's a big deal.

This is a perfect fix for those times when you have several people to feed and don't really want to go through the motions of fixing the single dishes to make a plate.

With Christmas just around the corner, these breakfast enchiladas will be a nice meal to serve and not worry about lots of cleanup time in the kitchen before preparing your lunch or suppertime meals.

Breakfast Enchiladas

1 pound pan sausage, cooked and crumbled

8 flour tortillas

6 eggs

1 Tablespoon flour

2 cups half & half

4 cups crisp bacon, cooked and crumbled

2 cups shredded cheddar cheese

Heat oven to 350

Add sausage, 1 cup cheese, half the bacon and stir to mix. Place 1/8 of mix into center of tortilla and roll up. Repeat until all tortillas are used.

Beat eggs and flour, mix in half & half and pour over tortillas into sprayed pan. This dish can be cooked, or covered and put in refrigerator until morning.

Before baking, sprinkle remaining cheese and bacon over tortillas. Bake 35 minutes covered with foil. Uncover dish and bake another 10 minutes.
