This week I have a KEEPER recipe for a person that is longing for a Chocolate Chip Cookie but does not want to make a whole batch of cookies.
What a coincidence that both my granddaughter, Cassie Rohrer and daughter, Lori Rasberry recently emailed me this recipe for a single cookie. It only requires a handful of basic ingredients, a mug and (once “baked” in the microwave) a spoon for diggin’ in. Best of all there is no messy cleanup.
If you are like me and chocolate chips cookies are not a favorite, any flavor chips can be used.
ONE SINGLE MICROWAVE COOKIE
1 Tbsp. unsalted butter
1 Tbsp. white sugar
1 Tbsp. light or dark brown sugar, firmly packed
½ tsp. vanilla extract
Pinch (1/8 tsp.) salt
1 egg yolk
ÂĽ cup flour
1 or 2 Tbsp. chocolate chips (or any flavor chips))
Microwave butter in a mug until melted (30 seconds). Using a spoon, mix in sugars, vanilla extract, and salt; beat until well combined. Beat in egg yolk until no trace of the yolk is visible. Mix in flour. Fold in chocolate chips. Microwave on HIGH for 40 seconds or a minimum of 50 seconds. It may not appear to be completely cooked on top but it will be fully cooked through to the bottom.
SUGGESTION: Indulge and enjoy yourself by serving warm with a scoop of vanilla ice cream on top.
