Evelyn Brandon - For The Record

I know I have told y'all that I love to browse cooking and recipe pages and blogs. And every once in a while I will see something that i cannot pass up. Those recipes will always include seafood or vegetables with a twist.

While browsing one of the online blogs, "Add a Pinch", I came across this recipe by Robyn Stone.

Robyn says "garlic shrimp makes a fast, yet fabulous, quick fix favorite dish. So versatile, this garlic shrimp can be used to top pasta or a bowl of cheesy grits!"

Guess what? She was right! This dish is awesome and I loved it added to the top of a baked potato. Of course the possibilities for any recipe like this are endless. Go ahead and try it, see what you can come up with. A little imagination will go a long way with this KEEPER shrimp recipe.

Brown Butter Garlic Shrimp

Ingredients

4 Tablespoons butter

6 cloves garlic

1/4 medium sweet onion, diced

2 pounds shrimp, peeled and deveined

1/2 teaspoon salt

1/4 teaspoon black pepper

pinch red pepper flakes

1/4 cup fresh parsley, chopped

Instructions

Melt butter to a large skillet over medium heat, As the butter melts, it will begin to foam as it transitions from a bright, lemon yellow color to golden and then finally to a nutty brown color. As the butter begins to turn the nutty brown, reduce the heat to medium-low. Add garlic and onion and cook until onion begins to become tender. Add shrimp and stir frequently until shrimp turn pink and lose their translucence.

Stir in salt, black pepper, red pepper flakes and parsley. Toss shrimp to make sure all are well coated.

Remove from heat and serve.

Bon appétit!
